ABA Education Committee and AIB International Practice Baking Foundation

ABA’s Education Committee visited AIB International’s campus last week to vie for the best recipe in the Chocolate Chip Cookie Competition (C4). The foundation of any cookie recipe consists of five types of ingredients: fat, sugar, flour, a rising agent and a binding agent. The teams baked their first batch with these components then huddled together to adjust the recipe to allow for a more chewy, crispy or crumbly product. After the teams pulled the revised batch from the oven, they compared both batches and reviewed what they learned from the challenge. Through hands-on learning and collaboration, the teams saw how a small change can make a big difference in a product’s taste, texture, color and size. The structure of a baked good, like a cookie, needs to be built from the ground up, and every ingredient – flour, sugar, fat, eggs, leaven and salt – plays a key role. Enrolling in training programs helps to strengthen skills that employees need to thrive, and both ABA and AIB offer opportunities for continuous education in the workforce. The ABA Education Committee enjoyed baking (and eating!) cookies in the AIB test kitchen and engaging in teamwork to overcome the most foundational and important baking challenges. For more information on how to rally your team for comprehensive industry training, check out the Meetings and Education tabs of the ABA website.

National Hot Dog Day and Bun Season Match Up for Summer Celebration

Last Wednesday on National Hot Dog Day and in the middle of Bun Season, ABA co-hosted the annual Congressional Hot Dog Lunch, which featured buns from member companies to underscore the importance of the baking industry for summer holidays and picnics. Hundreds of hungry attendees, including members of Congress, their staff and industry partners converged in the Rayburn Courtyard on Capitol Hill with hot dogs in-hand to network and enjoy the sun for a lunch break. This year’s lunch coincided with Washington, D.C. hosting the MLB All-Star game, and former players/managers Lou Pinella, Tim Rains and Ray Knight signed baseball gear. The Hot Dog Lunch serves not only to provide the baking industry with valuable facetime with members of Congress, but it also annually demonstrates to the nation’s policymakers that summertime food staples from bakers, meat producers and the food industry play an important role in celebrating American holidays.

Former White House Press Secretary Sean Spicer to Headline ABA NextGenBaker Leadership Forum

The American Bakers Association (ABA) is pleased to announce that former White House Press Secretary Sean Spicer will address ABA members at the NextGenBaker Leadership Forum with the ABA and Allied Trades of the Baking Industry (ATBI) Joint Boards of Directors at George Washington’s Mount Vernon, Oct. 2, 2018. Spicer will share his expertise and insight from his stint as spokesperson for the White House, following a dynamic presidential campaign. In this reflective and candid conversation, Spicer will share his insider knowledge about the presidency, the strategy that guides the Trump Administration and his experience as the face of a new era of politics. He also will discuss how the role of communications has significantly changed the advocacy landscape as well as strategies to be effective in the new environment. “ABA is pleased to offer attendees exclusive access to this high-profile communicator who served at the epicenter of modern politics and communications during a tumultuous time,” said ABA President & CEO Robb MacKie. “Hearing from Sean as he pulls back the curtain on Washington and shares his candid perspective on leadership and advocacy in our country will be a unique opportunity for attendees.” Before Spicer made his mark as one of the most recognized staffers in the Trump Administration, he built a decades-long career in Republican politics, witnessing and shaping the inner workings of Washington, D.C., from every vantage point – as a House of Representatives communicator, Assistant U.S. Trade Representative, Republican National Committee chief strategist and a top advisor to presidential campaigns. It was his role as the architect of the Republican National Committee’s public relations strategy that earned him a reputation as one of the party’s most effective and hardest-charging strategists and communicators. He helped the party successfully rebuild, following losses in the 2012 election, and he then played a key role in the strategy behind the party’s sweeping 2014 victories, the must-see 2016 primary debates and the party’s improbable wins across the country that November. The American Bakers Association is pleased to support students enrolled in the Cookie and Cracker Academy (CCA) by offering discounted registration for the 2018 Technical Conference. The Technical Conference is the largest conference designed specifically for cookie, cracker and baking manufacturing professionals to participate in hands-on training, strengthen skills and knowledge, and engage in powerful industry networking. It will take place Oct. 28-31 at the Hyatt Regency Indianapolis.  “ABA is excited to make the 2018 Technical Conference even more accessible to cookie, cracker and baking manufacturing professionals by rewarding companies who invest in employee education through the Cookie and Cracker Academy,” said ABA President & CEO Robb MacKie. “ABA strives to give Academy enrollees a seamless training experience, and this is one way ABA provides integrated training to strengthen the baking industry through robust educational opportunities.” According to a recent survey, 99 percent of respondents enrolled in CCA indicated that key principles and takeaways from the training were applied immediately in their current position. A recent case study also showed that a large baker manufacturer cut its per-year-loss by approximately $280,000 by reducing the number of bad batches from enrolling employees in ABA’s educational programs.  To benefit from this discount, students must be currently enrolled in the Cookie and Cracker Manufacturing Course (CCMC) or enrolled from July to October 2018 in the Entry Level Training Program, Intermediate Training Course or the CCMC. Students enrolled in the CCMC can also receive a work project credit if they participate in the Hands-On Training session at the conference. The American Bakers Association (ABA) is pleased to announce “A Conversation with Mario Somoza and José Andrés: Leadership in a Crisis” to be held on Oct. 2, 2018, at the NextGenBaker Leadership Forum with the ABA and Allied Trades of the Baking Industry (ATBI) Boards of Directors. President and CEO of Pan Pepín and ABA Board member Mario Somoza, along with internationally recognized chef and humanitarian José Andrés, will lead a conversation about how the food industry can take action during times of crisis. They will lead a thought-provoking dialogue about leadership and the critical role of the food industry in the disaster relief and rebuilding process. Somoza and Andrés will reflect on the lessons learned when serving the Puerto Rican communities following the destruction of Hurricanes Irma and Maria. “We are honored to have Mario and José join us to share their personal stories that exemplify the altruistic nature of the baking industry, and the food industry overall, when catastrophe strikes,” said ABA President & CEO Robb MacKie. “The baking industry’s resilience is commendable and yet unheralded. As we will hear once again, the baking industry is on the front lines of helping devasted communities get back on their feet. We are so fortunate to bring two important perspectives of leadership during crisis situations to attendees.” Based in Bayamón, Puerto Rico, Pan Pepín is dedicated to baking and selling fresh bread, buns and tortillas for the retail and food service markets, primarily under its own brand, as well as supplying the largest supermarket chains on the island with their private label products. Somoza joined Pan Pepín in 2006 after spending three years as Marketing VP of B. Fernández, where he helped lead marketing efforts for brands such as Budweiser, Kellogg’s, Heinz and Hormel. Prior to that, Mario spent a few years as the General Manager of the New York office of Dieste, a Hispanic advertising agency that is part of the Omnicom group. Pan Pepín has been recognized as one of the 20 Best Employers in Puerto Rico on three occasions, and it was the first bread and bakery in the Caribbean to achieve SQF Level 3 certification. Twice named to Time’s “100 Most Influential People” list, and awarded “Outstanding Chef” and “Humanitarian of the Year” by the James Beard Foundation, José Andrés is an internationally-recognized culinary innovator, author, educator, television personality, humanitarian and chef/owner of ThinkFoodGroup. A pioneer of Spanish tapas in America, he is known for his avant-garde cuisine and award-winning group of 31 restaurants throughout the country and beyond, including two-Michelin starred minibar by José Andrés. His work with his non-profit World Central Kitchen has earned global respect – notably, his team served over 3.6 million meals to the people of Puerto Rico following Hurricane Maria. “Our thoughts and prayers go out to Sally and the entire Lugar family in Tom’s passing.  Tom’s smiling face and gentle humor were always welcomed at our events and we looked forward to seeing him with Sally.  Tom served our industry well throughout his career and remained active into retirement.  Above all, Tom was very confident in his faith and not afraid to share it.  Tom and I always reminisced about our alma mater Purdue when we got together. So here’s to you, Tom, “BOILER UP” one last time.  You will be missed.” – Dave Van Laar
